Dried Chilies, aromatic herbs, mustard and cumin are the main flavourings. Also includes dehydrated onions and garlic. This mixture is rubbed into meat or fish to be roasted or grilled or can be used to season Gumbos(Southern American stews) and Jambalayas(rice dishes). Typical of Creole and Cajun cooking from Louisiana, Sothern Mississippi and Alabama passed down from the 18th century French colonists descendants of Arcadia, Nova Scotia of white, black and Native American mixed ancestry.
